Ohhhh the infamous fathead dough. It rolled (pun intended) on the scene, seemingly out of nowhere and changed the way low carbers ate forever. I initially saw it for the first time on the Fathead Movie website. From there, I put my own spin on things (as did every other low carb blogger) and I just ran with it. The list of things I could make with some variation of the dough seemed endless – sweet and savory, nut free, egg free… So many different variations. It truly did put so many comfort foods back on the table again. Low carb and gluten free pizza, cinnamon rolls, pot pie, danishes, bagel dogs… You name it, and we have recreated low-carbified it. With so many amazing fathead / cheese dough recipes floating around out there, I decided it would be a good idea to compile them all in one place. Well i’ve just tried the parmesan cheese bread rolls, what can i say. OMG how good are they. I live in Australia and have never heard of low moisture mozzarella so i used the one that was available n our local woolworths supermarket and they turned out fantastic. Thanks for the great recipe. I will be making these again.

I’ve used the fat head dough for pizza and loved it. I’m thinking I might try to do a muffuletta pocket or roll type thing. Any ideas to make it work out?
You could do it similarly to the empanada recipe. I bet that would work out great.
can this dough be frozen for a later time
No. With the amount of cheese in these recipes, freezing it and then thawing it out, wouldn’t get it back to a dough like consistency
Kyndra, thanks for a great round up of recipes. I use the fathead dough for many things including some of the listed recipes. It’s a lifesaver! I just shared the list with my son but I noticed that the danish recipe is actually made with oopsie rolls (she calls it cloud bread). I think it would be great made with fathead dough but that particular recipe isn’t done that way.
I have to save this one. This is the one recipe I have used over and over to make when I am craving pizza. It makes sense it could be used for other recipes. Thank you SO much for putting this together!

I also use the fathead dough for “taco” shells and bowls. I just roll them thin and bake them. When they come out hot, I place them over a wide wooden spoon (for a taco shell) or over the back of a bowl (for a taco bowl). It works very well. Both a bit crunchy and a bit chewy. 😉
For taco shells, you can also just use a piece of provolone cheese. Place it on parchment paper and microwave it for 1 minute and then fold it over your spoon to shape it. I just hold up the sides of the parchment paper… it only takes about 10 seconds to get firm enough to lay to the side and start my next one. It’s soooo simple and delicious!

I have to tell you I made the pepperoni pizza rolls this evening and they were fantastic. I make fat head crust and biscuits all the time but this was hands down the best recipe I’ve tried to date. Thank you so much
